Both DO Ribera del Duero and Sherry wines are classic choices for this cheese, but another option would be to try a regional wine pairing with one of the fruity and aromatic red wines from La Mancha. Try a bold crianza from DO Manchuela for example, made with 100% Cencibel (Tempranillo) grapes, for a complete taste of the region.

Ing. Marinated Manchego cheese
400 gr Manchego cheese
500 ml Spanish extra virgin olive oil
1 rosemary sprig
1 thyme sprigs
1 tbs whole black peppercorns

Imperial UK Units

14 oz Manchego cheese
17.625 fl. oz Spanish extra virgin olive oil
1 rosemary sprig
1 thyme sprigs
1 tbs whole black peppercorns

US Units

Ing. Marinated Manchego cheese
1.75 cup Manchego cheese
2 cup Spanish extra virgin olive oil
1 rosemary sprig
1 thyme sprigs

Preparation

Cut the Manchego cheese into 1 cm/ 1/2 inch cubes. Mix all the ingredients together in a bowl. Cover, transfer to the refrigerator and let them marinate overnight.
