Following the presentations, two chefs prepared fusion tapas with Chinese and Spanish flavors

INTERPORC, the Interprofessional Agri-Food Organization for Spanish White Pigs, recently organized the Spanish Pork Conference in China, on May 18th. This event, which is now in its third edition, was held at Shanghai’s luxurious 5-star Grand Kempinski Hotel had excellent turnout, with 31 pork importers and distributors in attendance. Other participants included members of the media and of local and regional public institutions. The event was organized in cooperation with Spain’s Economic and Commercial Office in Shanghai.
There were several presentations, after which a delicious selection of tapas were served, prepared by leading chefs in Shanghai, Thomas Xu and Paul Garcia, from La Maison restaurant. The Spanish-Chinese tapas were accompanied by a tasting of Serrano ham, against the backdrop of a live flamenco show.
Spain, which is the fourth-largest pork producer in the world, is the third-leading supplier of pork to China, which is an extremely important market. In fact, China is the largest producer and consumer of pork. Production accounts for more than 50% of the global total, while imports in 2016 expanded by 90% in year-on-year terms.
