The official countdown to Reale Seguros Madrid Fusión has begun! This leading gastronomy event will run from January 13th to the 15th and will bring together the industry’s crème de la crème, as it has been doing since the first edition back in 2003. It will include competitions, auctions, prizes, cooking demos and training workshops.
Participating chefs from Spain include Josean Alija, Rodrigo de la Calle, Dani García, Joan Roca, Mario Sandoval, Albert Adrià, José Andrés, David Muñoz, Oriol Castro, and Marga Coll, among many others. International chefs who will be speaking at the event are coming from Hong Kong, Germany, Italy, Colombia, South Africa and beyond.
There will be interesting workshops on a wide range of topics, with titles such as “Micology & Hunting,” “Understanding Small Game,” “The Textures and Flavors of Fish,” “A Green Sea for Haute Cuisine,” and “Instagram: The Digital Door for Restaurants.”
There will also be plenty of contests, such as the Cheese Bites Competition, the Signature Sandwich Competition, the National Tapas Competition, and the National Beer-Pulling and Tasting Competition.
As is the case each year, there will be a large exhibition area where companies, producers, regulatory councils, restaurants and brands will be able to showcase their products. This year’s event will be organized into two parts and will address the future of haute cuisine as impacted by the environment, human relations, social integration, recycling, new technologies, energy efficiency and applied psychology.
