New Spanish Restaurant Toledo to Open at Disney’s Coronado Springs Resort

Toledo will be on the roof of the Gran Destino Tower and will serve upscale Spanish fare and Spanish wine and beer to hungry park visitors

Move over Mickey Mouse, there’s a new attraction at Disney Parks. The company has plans to open up new resorts and themed areas, as well as new restaurants, and that includes a Spanish locale.

At the Coronado Springs Resort in Orlando, Florida, the company is adding the 15-story Gran Destino Tower. This will include more than 500 new rooms for Disney visitors and a new restaurant on the rooftop called Toledo.

Slated to open this month, this new venue will serve upscale Spanish fare, specializing in tapas. Menu highlights include a selection of pintxos such as salt cod stuffed Piquillo peppers; anchovy with Manchego cheese, quince and almond; Spanish omelet with Serrano ham and picholive olive relish; and mussels escabeche with saffron alioli. Other options include charred octopus with romesco and chimichurri; Rioja-braised chorizo with field onions; garlic shrimp; and several charcuterie and cheese boards, among others. There is plenty of steak, fish and seafood on the menu as well. The dessert menu features some delicious creations like café con leche profiterole and crema catalana with Valencia orange and chocolate tuile.

A master sommelier created the wine and cocktail list, which includes more than 75 options from both Spain and California, and beer and cider from breweries in Spain and the US will also be on offer. Guests will be able to sip on handcrafted cocktails, including a special gin and tonic made with saffron tonic created specially by the team at Toledo.
