The StarChefs Rising Stars Awards are coming up, and will be held on April 16th at The Curtis Atrium in Philadelphia. These awards aim to honor culinary professionals who “have strong, compelling culinary philosophies and are committed to fostering a culinary community by sharing their knowledge with fellow professionals.”
Spanish food and flavors will be in the spotlight at this important event, giving them visibility vis-à-vis American chefs. Several chefs will prepare dishes for various activities during the course of the evening.
First, at the VIP Reception, chef Pierre Labine will serve Catalan croquettes made with pickled red onions, romesco, micro parsley, Fermín Ibérico chorizo, and Ninot Bonell Garrotxa cheese. At the tasting gala, later in the evening, chef John Suley will serve glazed short rib slider with alioli, El Trigal Manchego cheese and sherry vinegar.
During the course of the event there will also be two Foods from Spain tables set up, where two chefs’ creations will be available for sampling. For table 1, chef Townsend Wentz will prepare a warm spring vegetable salad with Fermín Ibérico ham, Ninot Bonell Garrotxa cheese, Goya olives and capers, while the second table will have a selection of cheeses available, including Campo de Montalban Ibérico, Caña de Cabra, and Corcuera’s Doña Julia.
