Winner Named for Bocuse d'Or Spain 2018

Chef Juan Manuel Salgado of Restaurante Caelis in Barcelona, along with assistant chef Adrià Viladomat, will represent Spain at the Bocuse d'Or European finals next June 11–12, 2018, in Turin, Italy.

Curiously, this will be the second time that this chef-assistant duo represents Spain at the European event, having also competed in the Bocuse d'Or Europe in 2016.

This time around, the pair beat the other two finalist teams of Ismael González Blázquez and assistant chef Guillermo Gómez Barroso of Restaurante Café La Sede in Avila; and Rubén Amro and assistant chef Agustín Herrera of Restaurante Florida Retiro in Madrid, to take home the national championship.

For the win, Salgado and Viladomat prepared John Dory with a shrimp and sea urchin mousseline, crunchy cucumber salad with tomato water, beet and lobster raviolo, and celery tartlet, for their first dish; followed by Beef ribeye "heart" cooked at low temperature with a garnish of potato, truffle, marinated egg yolk and teardrop pea royal.

For the European finals in Turin, the team will compete against nineteen other teams from all over the continent, representing top culinary creativity, talent, innovation and technique. The winner of this competition will later go on to compete in the international finals.
