Monika Linton’s love affair with Spain began during her years at University, where she studied Spanish. After graduating, she spent three years in Spain, immersing herself in its rich culinary traditions. In 1988, Linton founded Brindisa, a company dedicated to importing and distributing fine Spanish foods. Undeterred, Linton began by selling Spanish cheeses, initially to chefs who were more adventurous than the general public. Today, Brindisa boasts multiple locations, including restaurants in Brixton and Barcelona, as well as a warehouse and shop in London. The company offers a wide range of products, from cured meats and cheeses to rice, legumes, and spices, all sourced from small Spanish producers committed to quality and authenticity.

In 2022, Monika Linton was honored with the Foods & Wines from Spain Award, recognizing her lifelong dedication to promoting Spanish culinary culture in the UK. In her acceptance speech, she reflected on the journey of Brindisa, likening it to planting an acorn that has grown into a robust oak tree. She expressed pride in having introduced British consumers to the rich tapestry of Spanish flavors, from the simplicity of a piquillo pepper to the complexity of a well-aged Manchego.
