Toni Gerez (Figueres, 1961) is much more than a maître d' or sommelier; he is a true ambassador of cheese. From an early age, he was drawn to the culinary world, and by the age of 18, he began working in restaurants. However, it was his time at the legendary elBulli that truly ignited his passion for cheeses and wines, where he had the opportunity to develop his refined knowledge of the art of cheese-making.

In 2015, Toni made a bold move to Castell Peralada, a Michelin-starred restaurant known for its commitment to excellence. As the head waiter and sommelier, Toni introduced an exceptional cheese cart, offering more than 300 varieties of both national and international cheeses. What sets this cart apart is not just its extensive variety, but Toni’s dedication to updating it weekly, ensuring that the selection is always fresh and diverse
