Chef Van Gameren is the craftsman of Bar Isabel, a project he launched after spending two months traveling through Spain and other European countries in 2011. Spain’s conviviality and the restraint exercised in cooking is what impressed the chef most from the country. He highlighted that in the country he learned that culinary experiences must be conceived as a succession of enjoyment from the first bite to the last dish. Morcilla with Brioche, boquerones and boquerones are but two of the flavors of Spain to be enjoyed at Bar Isabel.Barcelona’s Quimet y Quimet was a reference for the chef because of the ability of its bar people to create delicacies from canned seafood.The restaurant opened in March 2013, interestingly enough in Toronto’s Little Italy neighborhood. Bar Isabel was selected by Air Canada’s enRoute magazine as Canada’s best new restaurant in 2013. In 2014 the famous culinary critic Joanne Kates, who publishes a Top 100 of the Best Restaurants in Toronto annually, ranked Bar Isabel third
