Sugared almonds

Sweet made from toasted almonds with a sugar coating. Oval in shape, about 2 cm long (depending on the type and size of almond used), with a smooth polished white surface from the sugar coating which covers it.

Tasting notes

Mainly sweet flavor and crunchy texture.

Other notes

It can be found in a wide variety of colors, sometimes filled with chocolate instead of almonds, although the original peladilla is a white sugar coated almond.

Production / Processing method

First, whole almonds (Marcona or Largueta varieties) with the right caliber are selected and toasted in an oven at 150ºC for about 45 minutes. The toasted almonds are placed inside a drum where they are tossed for five hours while the sugar syrup is added. The process ends by refining the sugared almonds in another drum, after which they are packaged in cellophane.
