The Pedro Ximénez Old Fashioned mirrors those sweet, spiced notes and cuts through the richness with its warming, bittersweet finish. Marinated lamb skewers with fresh pomegranate chimichurri, puffed quinoa paired with Cerro Añon Gran Reserva Rioja where the lamb’s bold, savoury flavour is lifted by the fresh acidity and fruitiness of the pomegranate chimichurri. The aged Rioja brings structure, spice, and red fruit depth that beautifully complements the marinade and balances the richness of the meat. Seared tuna tostada with guacamole, citrus salad & chipotle aioli paired with Peach & Raspberry Rose Rioja Sangria where the fresh citrus and creamy guacamole brighten the seared tuna, while smoky chipotle adds a kick. The fruity rosé sangria refreshes the palate, echoing the citrus and gently cooling the heat of the aioli. |
