César Saldaña

A guardian of tradition shapes the future, letting the spirit of Jerez flow through time with quiet strength and vision

In the sun-drenched lands of Andalusia, where the Mediterranean whispers to the Atlantic, lies the land of Jerez. At the helm stands César Saldaña, president of the Consejo Regulador de las Denominaciones de Origen Jerez-Xérès-Sherry y Manzanilla-Sanlúcar de Barrameda since 2020, a custodian of centuries-old traditions and a visionary for the region’s future.

Born in 1961 in Jerez de la Frontera, Saldaña grew up surrounded by the culture of wine and the rhythmic pulse of Andalusian life. After graduating in Economics and Business Administration, he embarked on a career in international trade, holding roles in export management that took him across the globe. His deep-rooted connection to his homeland eventually led him to the Houses of González Byass and Sandeman, two of the most iconic names in fortified wines, where he developed his expertise in brand promotion and global markets. In the 1990s, he joined the Consejo Regulador as General Manager, a role in which he oversaw the promotion and regulation of Jerez wines on an international stage. His strategic vision and unwavering dedication to preserving the region’s legacy culminated in his appointment as president.

Saldaña is not only a leader but also an artist and a chronicler of his region’s rich history. Among his literary contributions are The Spirit of Jerez and Wines of the Albariza, which delve into the heritage and craftsmanship behind these exceptional wines. His latest work, The Book of Sherry Wines, is a masterpiece that he both authored and illustrated, combining his knowledge with his artistic talent to bring the story of Jerez to life. This book, released to wide acclaim, offers a detailed and visually stunning exploration of the winemaking traditions of Jerez, celebrating its legacy with a unique personal touch.

The wines of Jerez and Manzanilla, nurtured in the chalky albariza soils, are as multifaceted as the region itself. The crisp, salty tang of Fino and the maritime freshness of Manzanilla evoke the essence of their origins. Meanwhile, the nutty depth of Amontillado, the rich hues of Oloroso, and the velvety sweetness of Pedro Ximénez showcase the artistry of time and craftsmanship. Each sip tells a story of land, patience, and ingenuity, capturing the spirit of a region where winemaking is both a science and an art.

“Jerez wine is extraordinary, with a fabulous versatility to accompany food."

César Saldaña, with his vision, artistry, and dedication, stands as a true guardian of this remarkable heritage. Through his books, his leadership, and his passion, he has cemented his place as a vital figure in the ongoing story of Jerez, ensuring its wines remain timeless ambassadors of excellence and tradition.
