Championing Spanish Cuisine in the UK
Marcos Fernández is a name synonymous with authentic Spanish dining in the UK. Born in 1972 in Lugo, Galicia, he embarked on a journey that seamlessly blended his entrepreneurial spirit with a passion for gastronomy. After studying Economics at the University of London, Marcos ventured into the music industry.
In 2008, recognizing a gap in the market for genuine Spanish cuisine in London, Marcos co-founded Ibérica Restaurants with renowned chef Nacho Manzano. Their vision was clear: to offer an authentic Spanish dining experience that went beyond the typical tapas fare. Ibérica's success is attributed to its commitment to quality ingredients, stylish interiors designed by Lázaro Rosa-Violán, and a menu that celebrates the rich culinary traditions of Spain, serving croquetas, paella, patatas bravas or suckling pig from Segovia, among other dishes.
Under Marcos's leadership, Ibérica expanded to multiple locations across London and Manchester, becoming a staple for those seeking genuine Spanish flavors, until he parted ways with the group in 2024.

In 2019, he furthered his commitment to Spanish cuisine by launching Arros QD in collaboration with Michelin-starred chef Quique Dacosta. Located in London's Fitzrovia, Arros QD specializes in traditional Valencian rice dishes, particularly paella, cooked over an open fire, offering diners a taste of Spain's coastal culinary heritage.
Marcos's dedication to promoting Spanish gastronomy has not gone unnoticed. In October 2024, he was honored with the Foods & Wines from Spain Award at the prestigious San Sebastián Gastronomika event. This accolade recognizes individuals who contribute to elevating the image of Spanish cuisine internationally.
