With Spanish roots, seasoned with Mediterranean flavors, a perfume of Panamá, and a bistronomic air, Azafrán is a fine dining concept in small-sized versions crafted by a cocina de mercado inspiration that renews its menu on a regular basis. Specialties includes contemporary patatas bravas, grilled octopus with a fava bean hummus, Ibérico ham croquettes with saffron alioli, Madrid-style squid, or fish with a spiced bread crust with Manchego cheese and a red pesto. Wines from Spain predominate in Azafrán’s wine list.The chef is Alvaro Perrino, native of Madrid. He attended culinary arts school in Spain and worked at top restaurants of this country prior to landing in Panamá to take charge of the kitchen of Spanish emblem restaurant El Bodegón. Azafrán is the first restaurant he owns and leads.
