Spero’s new blue-hued venture takes cues from Basque Country’s nightlife-driven resort town of San Sebastian, where bars are eponymous nods to their owners. The inviting, minimalist decor allows Spero’s award-winning cooking to shine: a seafood-forward spread focused on Mid-Atlantic fare. Complemented by such specialties as imported Spanish turbot and Autumn Olive pork from the Shenandoah Valley, the menu is shaped by the careful sourcing of world-class ingredients. In turn, the cocktail program takes cues from the kitchen, with a focus on high-quality spirits that elevate classic recipes. Guests can also choose from a tightly curated wine list, as well as regional beers on tap.
