TapasLondon is home to a new Spanish restaurant, Donostia, set to be the “flag bearer for Basque cuisine. Fish is a main focus (and the menu features classics such as cod in pil-pil sauce and stuffed squid in ink), roast suckling pig will be available, and, in general, the menu is adapted to seasonal produce. Pintxos include octopus in Basque marinade, tempura prawns with Bayonne ham, and ham croquettes. Donostia also serves Ibérico pork in romesco sauce, Spanish omelet with cod, baby squid (txipirones), and Padron peppers with sea salt, among other dishes. The wine list includes txacoli, straight from a producer in Getaria, Rioja wines, and cider.
