The duo will share their extensive expertise from running four successful Spanish restaurants, in Bristol, Cardiff and Penarth
Owen and Tom Morgan, the brothers behind the wildly successful restaurant group Bar 44, have a new culinary project in the works: they’ve teamed up with Welsh publisher Seren to create a fall cookbook. The recipes will draw their inspiration from the brothers’ experience serving top-notch Spanish food and drink at their network of Bar 44 restaurants, in Bristol, Cardiff and Penarth. Home chefs are going to love the more than 100 recipes, which will feature all kinds of dishes: fish and seafood, legumes, rice, meat, salad and vegetables, stocks, tapas, and desserts, and it will also include ideas for drinks as well as sauces.
Recipe highlights include tuna tartare with apple ajoblanco; lamb shoulder empanada with Cantabrian anchovy and mint dressing; Isle of Wight and Ibérico Tomatoes with Torta de Barros cheese and Cornicabra olive; and crema catalana tart. The book aims to share their personal experience, from how they came to open their restaurants and how they go about discovering new dishes to how they source their ingredients. The book officially launched on October 18th and there are in-person presentations scheduled in October and November at the Bar 44 outposts in Cardiff and Bristol.
