The Galicia-based Michelin-star chef used Savel, a Galician cheese with numerous distinctions, to make her holiday creation.
Even though the holidays are fast approaching, Spanish chefs take no days off when it comes to innovating. And what better product to experiment with than turrón, arguably Spain’s Christmas treat par excellence.
This time, Lucía Freitas, from A Tafona restaurant (1 Michelin star) in Galicia, has worked her magic on Spaniards’ favorite nougat. She has created a delicious cheesecake-flavored turrón using Savel cheese, from Galician cheesemaker Airas Moniz. This Lugo-based company makes just two cheeses, Terra and Savel.
Savel is a blue cheese made from Jersey cattle. It has an unmistakable flavor and aroma and is both elegant and creamy. In both 2021 and 2022, it received the prestigious title of Spain’s Best Cheese at the Salón de Gourmets trade fair, and in 2021 it took home a Super Gold distinction at the World Cheese Awards.
