Heat 1 tablespoon of Spanish olive oil in frying pan. Cook the chorizo sausage slices until lightly golden. Remove and place on a plate with kitchen paper to absorb the excess of fat. Halve one bread bun and place the chorizo slices on top of one the halves. Arrange on top some slices of the PDO Manchego cheese and cover with the other half of the bread bun. Repeat with the rest of the bread buns.
