Dukkah was born with the purpose of showcasing the authentic Spanish cuisine in Japan. The name makes reference to a spice that is a mixture of cumin, coriander, nuts and sesame seeds, and it is a metaphor of the Spanish cuisine, which has a mixture of many different cultures. The style of cooking is Spanish with a special focus in some regions such as Galicia, Cantabria, Basque Country, Navarra and the north of the Mediterranean. It appears in some national and international guides including the Michelin Guide where it is listed as a Spanish restaurant and recognized with a Bib Gourmand.
