El Bogavante 346 opened in 2008 just after the Spanish cuisine boom in Japan Spanish. The style of cooking is purely Spanish, using Spanish techniques applied to some Japanese ingredients, and sometimes Spanish ingredients are combined with some Japanese ingredients in order to provide a local twist. The recipes come from cooking lessons the chef and owner received during his training in a culinary school in Barcelona, working experience in Spanish restaurants and dishes he tried when he travelled t o Spain.
