The restaurant has won various innovation awards, added augmented reality to its dining experience, and allowed customers to eat in the metaverse
Chef Paco Roncero is celebrating a big milestone: his one-of-a-kind restaurant in Ibiza, Sublimotion, is celebrating its 10th anniversary.
Sublimation offers a unique, immersive experience that “turns the dining table into a stage” and aims to please an increasingly demanding public. To celebrate this achievement, the chef will welcome Spanish artist Antonyo Marest to inaugurate the 2023 season. Marest will create a large-scale artwork on the Sublimotion building so as to bring art to the island streets.
Back in 2012, Roncero and his creative director, Eduardo Gonzales, joined forces to create this new concept. Initially they worked with Palladium Hotel Group to develop the first show of its kind, one that brought gastronomy, technology and the performing arts together for an unprecedented proposal that aims to delight “all 5 of the senses.”
Over the last 10 years, Sublimotion has received accolades, including the distinction for gastronomic innovation at the 2014 Hospitality Awards and the innovation award at the 2022 National Hospitality Awards; it used augmented reality to allow diners to see their meal’s nutritional profile “floating around them;” and it offered meals in the metaverse. An outpost was also established in Dubai for two seasons, where it was extremely successful.
