Spanish chorizo, with its rich flavors and deep cultural roots, is becoming a global object of desire. The Consorcio del Chorizo Español has been at the forefront of introducing this delicacy to international markets. In 2023 alone, they labeled over 3.3 million kilograms of chorizo across 53 countries, marking a 15% increase from the previous year.
The United Kingdom has emerged as a significant market, with exports reaching a record 2.2 million kilograms in 2023, accounting for approximately two-thirds of the Consorcio's total exports.
Savoring the Flavor: Tasting Notes
Spanish chorizo offers a symphony of flavors that captivate the palate. The traditional sarta (horseshoe) variety, which leads in sales, presents a firm texture with a balanced blend of smoky pimentón (paprika) and garlic, delivering a savory depth that's both robust and nuanced.
For those preferring a milder taste, sweet chorizo variant dominates the market, representing 79% of sales. It offers a subtle sweetness that complements its rich, meaty profile, making it versatile for various culinary applications, from tapas to hearty stews.
Protected Origins
Spain’s rich charcuterie tradition is safeguarded by several DOP (Denominación de Origen Protegida) and PGI (Indicación Geográfica Protegida) labels, which guarantee not only geographical origin but also adherence to time-honored production methods.
Among the most renowned PGIs is Chorizo Riojano, made exclusively in La Rioja. This chorizo is known for its coarse mince, intense red color, and smoky aroma thanks to the exclusive use of pimentón garlic, and salt — with no additives or preservatives. It must be naturally cured and shaped in a sarta or straight cane format.
Another distinguished label is the PGI Chorizo de Cantimpalos, hailing from the province of Segovia in Castilla and León. It stands out for its medium grind, vibrant pimentón-forward flavor, and long curing time in the region’s dry climate.
Expanding Horizons: Chorizo's International Appeal
Beyond the UK, Spanish chorizo is gaining traction in markets like France and Germany, with exports of 553,058 kg and 131,150 kg respectively in 2023. The Consorcio's strategic partnerships and promotional campaigns, supported by European funds, aim to further solidify chorizo's presence globally.
