Coliflor de Calahorra PGI

A type of cabbage which grows a mass of several white florets or ‘curds’. The PGI cauliflowers are the flower-heads of Brassica oleracea L. Convar. Botrytis (L.) Alef of the Botrytis variety, from the hybrid varieties Nautilus, Castelgrand, Arbond, Pierrot, Armetta, Fargo, Belot, Scaler, Mayfair, Daydrean, Arthur, RS-91013, Dunkl, Fortrose, Jerome, Matra, Tucson, Aviso, Cafano, Admirable, Imola, Serrano, Nomad, Midar, 5090, Kerjo, Eclipse, Kimball, Astral, Regata, RS-84299, Arven and Astoria.

The compactness rate is over 0.5, the color is white to creamy-white depending on the variety, and there is no graininess. The leaves are green, stiff and well formed. Minimum diameter is 11 cm / 4,3 in.


Production / Processing method

Land management, irrigation and pest and disease control are carried out on the basis of farmers’ experience and extensive knowledge of this crop, using whatever techniques are most appropriate.

Harvesting is done manually when the individual flower-heads reach the right degree of maturity, with pickers returning to the fields as often as necessary. Great care and speed are required to ensure maximum quality and good keeping qualities. No more than 12 hours must pass after picking before the picked cauliflowers reach the store.


Geography / Relief and climate

Cauliflowers are very much influenced by the climate in which they grow. The climate of this region with long summers, mild winters and high relative humidity coming from the Ebro and Cidacos rivers is ideal for promoting slow development. This results in firm, white flower-heads, both essential quality factors. The local soil is deep, rich, well-drained, with organic content over 1.2% and this too has a marked influence on quality.
