Cakes made in the Arab tradition in the town of Medina Sidonia (Cádiz), from pure bees' honey, almonds, hazelnuts, flour, breadcrumbs and spice (coriander, clove, anise, sesame and cinnamon).

Tasting notes

Golden brown when cut, with a slightly spicy aroma and a balanced flavor of nuts and honey.

Production / Processing method

The cakes are made from a recipe that has been followed in this town for centuries. The procedure begins with heating the honey. The toasted, crushed hazelnuts and almonds are then mixed in together with the honey, breadcrumbs, flour, toasted sesame, coriander, clove and anise. While still warm, the mixture is cut and cooled to room temperature then molded into the characteristic long cylindrical shapes. Cinnamon may also be added to the hot mixture. Finally, the cut rolls are dipped in syrup, coated with sugar and dusted with powdered cinnamon. They are then individually wrapped.
