The chorizo’s marked pimentón flavor can be balanced with a slightly acid, fragrant Cava Brut to refresh the mouth after every bite.
First slice the chorizo, then place it in a clay pan and cover with the cider. Bring the pan to the boil and let it simmer gently until the liquid reduces by a half.
