One of the menu highlights is eggs over easy served on top of fried potatoes and either chorizo, morcilla or strips of ham. Another popular dish is tortilla de patatas chips, which is essentially Spanish omelet made with the chef’s potato chips, optionally topped with chorizo or beef honeycomb tripe. Although breakfast dishes dominate the menu, there are some proposals that are more “lunchlike,” such as cheese and charcuterie platters, soups, stews and also salads. There’s talk about adding olive oil pancakes to the menu in the future, along with dishes from South and Central American cuisines. Andrés may seem unstoppable, opening up new locales in Chicago and New York City in addition to this diner in Bethesda, but he maintains that he will not rest until he brings Spanish food to every corner of America. Now that’s a great ambassador!
