Join The Wine Merchant's Graham Holter for a fun and practical food & wine pairing workshop. Special guests Jorge Muga (Bodegas Tihom) and José Carlos García (Bodegas Wilmot) will show off some of their wines from DOCa Rioja and Vino de Pago Los Cerrillos, matched with simple tapas dishes by Brindisa kitchens. Take home top tips on how to re-create delicious Spanish foods for pairing events in your store, tasting rooms or bars.

Rías Baixas is world-famous for its vibrant, youthful Albariño—but this Atlantic region has far more to offer beneath the surface. This masterclass explores the more intriguing expressions of Rías Baixas through a curated selection of six wines that challenge expectations and reveal the region’s complexity. Moving beyond the archetype of fresh, early-drinking whites, we will taste wines shaped by lees-ageing, extended texture, alternative styles, and lesser-known native varieties.

Nacho del Campo, executive chef at Camino Restaurant, will prepare and present some of his signature tapas. Hailing from Vitoria in the Basque Country, a region praised for being the gastronomic heartland of Spain, Chef Nacho will prepare favourite dishes, using fresh and carefully sourced Spanish ingredients. Camino’s owner and Spanish wine expert Richard Bigg will pick the wines and share his tips on perfect pairings.

The DO Campo de Borja pioneering Garnachas Históricas project—developed in collaboration with the public universities of Navarra and Zaragoza—highlights the exceptional potential and aromatic expression of Garnacha from old vines. Drawing on four years of research, the initiative underscores the value of preserving viticultural heritage and its close connection to terroir, while also introducing an innovative methodology to rigorously certify the true age of these historic vineyards.

PAELLA MASTERCLASS: THE SECRETS OF COOKING PAELLA AT ARROS QD. PRESENTED BY AMELIA SINGER

Arros QD is an open wood-fire and paella restaurant in the heart of Fitzrovia, London, inspired by the culinary heritage of Valencia. Founded by Chef Patron, Quique Dacosta, the restaurant is grounded in the defining pillars of Valencian cuisine: pristine seasonal produce, rice as the undisputed protagonist, and the elemental force of fire. This Paella Masterclass, led by Executive Chef Eduardo I. Salazar, invites guests to explore the history and foundations of traditional Valencian paella, the role of fire, ingredients, technique, and why each element matters. Head Sommelier Marina will offer her expert perspective on the dialogue between paella and wine, presenting a curated selection of pairings.
