Enjoy our Eat Spain, Drink Spain offer at Besa: a selection of tapas and a Spanish wine flight that brings the regional flavours of Spain to the Bondi coast. We open with the Gilda, the classic Basque pintxo of anchovy-wrapped olive, guindilla and pepinillo finished with sweet Bico pepper, salty and sharp and bright all at once. Next, citrus-cured blue mackerel on toast with a green romesco, the herbaceous, almond-rich sauce carrying the oily fish while the citrus keeps everything fresh, served alongside encurtidos whose clean acidity sits beautifully against the richer plates.
The tapas are paired with a four-glass flight of Spanish wines, two white and two red, chosen to move across the country's regions, among them a saline, mineral Albariño from Rías Baixas and a structured, fruit-forward Tempranillo from Rioja, each pour selected to complement the salt, citrus and warmth on the table. It is a relaxed and generous offering, rooted in the produce and wines of Spain and shaped by our coastal corner of Bondi.
