Taking a detour from the Basque Country to Valencia, Gildas celebrates Spain's most iconic rice dish with a special paella every Thursday night throughout Eat Spain, Drink Spain. Inspired by Lennox Hastie's time in the foothills of Basque Country, and a homage to the original pintxo and film noir, Gildas brings together the flavours and spirit of a pintxos taverna with incredible Australian and Spanish produce.

Join us at Gildas every Thursday night for paella with a glass or two of our vino del dia or enjoy a glass of Jerez's best from our extensive selection of sherries.
