Throughout Eat Spain, Drink Spain, MoVida Aquí will offer a special Casquería (Spanish offal) Menu, priced at $65, celebrating the depth and richness of Spanish nose-to-tail cooking. Guests can enjoy Karina Gordal olives; house-made morcilla (Spanish black pudding) served with pan cristal; orejas (crispy pig’s ears) with spicy mojo sauce and traditional accompaniments; and Callos Madrileños (Madrid-style tripe stew) prepared with chorizo, Navarrico chickpeas, La Chinata smoked paprika, Sierra Maestra Fino Sherry and La Legua carne de ñora. In addition, on Saturday 12 September, MoVida Aquí will host Cocido Madrileño: Spain’s Comfort Food, a special $80 lunch celebrating one of Spain’s most enduring dishes, served in the traditional Madrid style across three courses: broth with fideos, chickpeas and vegetables, and a generous selection of slow-cooked meats and cured sausages.
