During Eat Spain, Drink Spain, Sebastian Williamstown brings a taste of San Sebastián to Melbourne’s waterfront, inviting guests to enjoy a relaxed Spanish dining experience by the bay.
Set inside a heritage-listed bathing pavilion on Williamstown Beach, Sebastian blends sweeping views with a vibrant Basque-inspired menu. Drawing on the spirit of northern Spain, the offering celebrates the culture of pintxos, seafood, and dishes cooked over a custom Parrilla grill.
For the festival, the kitchen presents a selection of signature dishes that showcase both Spanish tradition and premium local produce. Guests can begin with gambas al ajillo—Australian king prawns in chilli garlic sauce—or Port Arlington mussels escabeche with saffron aioli. The menu also features a Cantabrian anchovy bocadillo with whipped butter and espelette, alongside Juan Pedro Domecq Ibérico jamón, aged for 42 months.
These smaller plates are complemented by Sebastian’s broader Basque-inspired approach, from vibrant pintxos such as Gildas and chorizo-stuffed dates to larger dishes cooked over the restaurant’s custom Parrilla grill, including seafood, meats, and seasonal specials.
The experience is paired with a curated drinks list featuring Spanish wines such as Paco y Lola ‘Ophalum’ Albariño (Rías Baixas) and Artuke ‘Pies Negros’ Rioja, as well as the refreshing Basque 75 cocktail with Gin Mare, vermouth, lime, and cava.
