Three nights. One journey through Spain.

Gaudir, the gastronomic tavern by Cesc Durán and Gabriela Flores in Verónica Anzures, presents a dining experience dedicated to the iconic dishes that define Spanish cuisine.

A six-course journey traveling from south to north and back again, exploring Galicia, Valencia, the Basque Country, Castilla y León, and Castilla, with each course paired with a wine from its region.

The journey begins at the bar with Spanish potato tortilla, garlic shrimp, and Jabugo ham with crystal bread, followed by Pulpo a Feira, Valencian paella, Bacalao al Pil-Pil, roast suckling lamb, and Torrija with leche merengada ice cream.

A celebration of Spanish cuisine without deconstructions or reinterpretations: classic dishes prepared as they should be, with the technical rigor of a kitchen rooted in Catalan tradition.
