To match it, we’ve chosen Habla de la Tierra 2022 from Bodegas Habla, a modern winery from the exact same region. It’s a fresh, fruit-forward red with smooth tannins that easily balance the richness of the Iberian pork and egg, while the subtle earthy and herbal notes in the wine bring out the smoky paprika and truffle without overpowering them.
