Pairing: ‘Sketch from wine wizard extraordinaire Raul Perez has been on our list since we opened,' says wine supremo Holly Willcocks. 'This is Albariño but not as you know it, with a touch of oak, giving it an almost Burgundian feel, but with the saltiness and ripe citrus flavours we know and love from the grape. I like to pair Sketch with Caldereta, a lobster stew originating in the mountains of Mallorca. The bright acidity is able to cut through the richness of the dish, but with enough weight to hold up to the spicing.'
