The 2nd International Ibérico Forum is coming up fast, and will be held in Salamanca, Spain on October 28th and 29th. The objective of this event is to raise the profile of a first-class product from Salamanca, Ibérico pork, and promote its endless culinary possibilities.
One of the main highlights of the forum is a competition catering exclusively to students and professionals, from Spain and abroad, in the hospitality industry. The main focus will be to promote the use of fresh and cured Ibérico products. Contestants are encouraged to create traditional recipes, use other cultures as their inspiration, get creative, and come up with a unique recipe—in short, anything goes. A panel of professional judges already selected the 10 semi-finalists based on originality, presentation and preparation, and from those, 4 finalists were chosen. They will compete at the forum in October and the winner will take home $5,000.
The winner of the first edition, Jorge Lorenzo Esteban, went on to prepare his dish—Ibérico noodles with cocido soup—live at Madrid Fusión.
The forum will also feature a series of interesting presentations and cooking demos.
