Located on the coast of the Cantabrian Sea between the Basque Country and Asturias, Cantabria is a small region bursting with authentic flavors. Nobody can travel to Cantabria without trying its gastronomic delights such as canned anchovies, one of the region's culinary legacies.

Its cow's milk cheeses are famous, two of which have Protected Designation of Origin status: PDO Quesucos de Liébana and PDO Queso Nata de Cantabria.

The same green mountains where these cheeses are produced are home to a singular meat, Carne de Cantabria.
As the region borders the Cantabrian Sea, it's devotion to fish and seafood is understandable. Tourists in Santander, the region's capital,  who visit Esperanza Market will find a large number of fishing stalls offering the freshest and highest quality fish.

And we cannot forget Cantabria's baked goods... The locally made butter is one of the main ingredients in the region's most traditional sponge cake, sobao pasiego, which is made from wheat flour dough, sugar and eggs. It makes for a delicious breakfast when dipped in milk.
