Superchef Dabiz Muñoz Opens New Restaurant in Madrid, RavioXO

With a menu of 14 dishes and a focus on Asian flavors and dumplings, reservations for the first two months were complete within minutes

Dabiz Muñoz is at it again. The superchef recently opened a new restaurant in Madrid called RavioXO inside the El Corte Inglés department store on the Paseo de la Castellana. As soon as it opened its doors, it was booked entirely for the months of May and June.
Then menu consists of 14 dishes, all of which combine unique textures, interesting flavors, and unexpected aromas. Throughout the menu, there's a noticeable nod to Asian cuisine, especially dumplings.

RavioXO dish

This includes cold partridge and sea urchin ravioli; steamed quesadilla and popcorn made with huitlacoche, miso butter and mozzarella; homemade garlic chili and Basque pepper with cherry tomatoes, tuna tataki, and citronella oil; and a Hong Kong-Madrid cocido with fried chickpeas, Ibérico ham broth, shredded steak, black alioli, and purple potatoes. The desserts are just as spectacular as the main courses. Highlights include chocolate cake made from butter cookies, cream, and shiso vinegar; and chocolate with ginger, caramel butter, chocolate cookies, and miso cream.

Unsurprisingly, there's a selection of creative cocktails to accompany Dabiz's creations. They're made with a host of surprising ingredients, among them chipotle chiles, Jabugo ham essence, and lime kefir. This is the chef's third restaurant in Madrid. We have received countless accolades, among them ranking first at the most recent edition of The Best Chef Awards. He also has several Michelin stars. In 2021, his DiverXO restaurant was ranked 20th on The World's 50 Best Restaurants list.
