Cut triangles of Manchego cheese and lay on top thinner slices of membrillo (quince paste) of the same size.

This combination of sweet and savory can be successfully served with a variety of wines, depending on the degree of ripeness of the cheese. Since the most usual practice is to serve it with well-cured cheeses, an interesting partner is a sweet Muscatel from the Málaga district of La Axarquía.
