A dry cava (brut nature), young enough to keep its predominant hints of blossom and white fruit, refreshes the palate without being overpowered by the escabeche ingredients (vinegar and paprika), which overwhelm the flavor of most wines.
Arrange 8 large crisps in a wide dish. Place a pickled mussel on top of each crisp (Make sure that the crisps are big enough to support a mussel.) This tapa is popular in Madrid and is normally accompanied by a glass of beer. The textures and flavors of the two ingredients complement each other very well.
