Founded in 1891 on the Basque coast, Ortiz has spent five generations perfecting one thing: anchovies caught wild in spring, salt-cured in barrels for six months, then hand-filleted and packed in olive oil — firm, meaty and deeply savoury without a trace of harshness. Paired alongside, Espinaler Rojo is a century-old secret recipe of over 25 botanicals — wormwood, cardamom, gentian and quinine among them — delivering a ruby vermut with aromas of oregano and caramel and a classic bittersweet finish.
