On 13 September, Olivia Restaurant & Lounge invites guests to experience the flavours and traditions of Spain through a special brunch. The multi-course menu celebrates Spain's culinary heritage, weaving together time-honoured traditions, distinctive ingredients, and Olivia's contemporary approach to Spanish cuisine.
Highlights include the Martini Omelette with Caviar, a modernist take on tortilla de patatas inspired by Ferran Adrià, alongside Jamón Ibérico and Pan con Tomate, two Spanish staples. The Bomba reimagines the Barcelona tapas classic with squid ink potato dough and spiced beef, while Octopus Carpaccio nods to Galicia's Pulpo a Feira. Seafood continues with Bouchot Mussels and an Argentinian Prawn Rice inspired by Spain's coastal arroz caldoso. Richer courses feature slow-braised Angus Beef Cheek and 'Ibérico' Suckling Pig, drawing on Segovia's Cochinillo Asado tradition, followed by a Spanish and French cheese selection with picos de pan.
Dessert brings Olivia's Signature Cheesecake and a Spanish Torrija with ice cream, a caramel-brioche take on the classic.
The brunch is complemented by a curated Spanish wine and Cava selection from Ewineasia, with a S$108++ wine and Cava free-flow package (2.5 hours) or a S$78++ cocktail free-flow package for those who prefer cocktails.
