Foods from Spain will showcase trends and innovations at this year’s CaterSource in Anaheim, California on Wednesday, May 4th and Thursday, May 5th. The conference and trade show of unrivaled influence and inspiration will be filled with more than 300 suppliers, ideas, and trending innovations that are shaping the catering and events industry. Attendees will be immersed in events and informative discussions with vendors and established brands that bring unique and fresh ideas to the table.
Renowned Chef Mat Schuster, owner of Canela Bistro & Wine Bar (SF), will be the official host at the Foods from Spain booth (#1681 and #1679) at the show. Chef Schuster’s neighborhood Spanish restaurant in San Francisco focuses on modern takes of traditional Spanish cuisine. Founded in 2011, Canela Bistro & Wine Bar is the realization of a dream to share the love of Spanish cuisine and culture in San Francisco. Schuster has dedicated his life to creating sophisticated and unforgettable flavors using only top of the line local products in conjunction with gourmet Spanish products.
Chef Schuster will showcase Spanish delicacies at the booth through an exclusive sampling menu, which will give attendees an opportunity to taste, explore and learn about Spain’s high-quality ingredients and rich cuisine. The sampling available will include strawberry Gazpacho and pintxos, a small snack traditional in northern Spain and especially popular in the Basque country, Navarra, La Rioja, Cantabria, and Asturias. Attendees will get to try three different pintxos: one with Cabra al Vino (goat cheese) and honey, an option with olives, mussels and guindilla (peppers), and a third version topped with white beans, pulpo (octopus) and cured chorizo. Guests will also have the chance to sample a Bocadillo (an authentic Spanish sandwich) with Mahon cheese, capers and peppers.
Another star of the show will be Spain’s extra virgin olive oil. Spain is #1 in quantity and quality. The largest olive oil producer and exporter in the world, Spain has over 350 million olive trees and 200 olive varieties. All of Chef Schuster’s samples will include a variety of distinctive EVOOs from 5 Spanish EVOO producers that will be present.

In this context Spain has an important presence with two unique booths featuring Murcia al Vino cheese PDO, a wine-bathed cheese made from pasteurized goat's milk in the Murcia region of Spain; and Mahon-Menorca cheese PDO, a soft to hard white cheese made from cows' milk, on the island of Menorca of the Mediterranean coast of Spain. In this space attendees can sample and enjoy these cheeses with delicious Spanish accompaniments such as membrillo (quince paste), Marcona almonds and diverse fruit logs.
This participation is part of a larger campaign financed by ICEX and both DPOs and executed by Foods from Spain in New York, to promote the quality and availability of these cheeses in the US market. This campaign comprises, besides CaterSource, Virtual Webinars for cheese retailers and professionals, POS promos at top retailers in the US, a digital advertising campaign The Whole Wheel that includes Social Media Immersion, Trade and Consumer Email Newsletter, Website Sponsored Story in addition to educational programs in top culinary and cheese schools in the United States.
