Madrid Fusión Announces Plans to be Held In-Person and Virtually in 2021

Madrid Fusión international culinary conference will focus on circular gastronomy this year, and on sustainability-minded chefs and cuisines.

Great news in the food fair sphere. Madrid Fusión will be held this year from May 31st to June 2nd at IFEMA.

For the first time ever, the event will be held in person and it will be streamed online so that anyone can tune in from any part of the world. This prestigious food fair has been held for 19 years. For those who attend the in-person event, there will be a wide range of Covid-safe activities, cooking demos and tech demos.

The event this year will be organized around the concept of circular gastronomy and will focus specifically on cuisines that are committed to the environment and which support the entire food chain (from farm to table), the use of every part of a food product, the concept of edible cities, biodynamic crops, and more. There will also be a component that looks at how consumers and diners are more becoming more "aware" and demanding. People increasingly want to know more about their food and where it comes from and this is driving change in the hospitality industry.

At the moment the following chefs have been confirmed as speakers: Angel León, Ricard Camarena, Ignacio Echapresto, and Xavier Pellicer from Spain, as well as international names such as Flynn McGarry, Joshua Niland, Davide Caranchini, and Juan Luis Martinez, among others. There will be a focus on chefs who value sustainability when cooking.

While the program has yet to be revealed, one important project that will be featured at Madrid Fusión this year is Jose Andres's new initiative as part of World Central Kitchen called Chef's Relief Training, which seeks to teach chefs how to help emergencies.
