The 13th Annual StarChefs International Chefs Congress will run from October 21st to the 23rd at the Brooklyn Expo Center. Some of the sector’s top thinkers and innovators will be on hand to participate in a wide range of activities, from beverage workshops and food carts to business panels and main stage presentations.
Spanish Michelin-star chef Ramón Freixa will be attending the event, and is scheduled to speak on October 21st on the main stage. Freixa’s presentation will be called “My Philosophy: Product, Technique, and Feeling.” The chef’s dishes all have a “secret history [that’s] illuminated gradually and with flair,” and on this particular occasion, Freixa will offer an up-close look at Under a Black Garlic Veil, sharing his techniques and philosophy.
The chefs has described this complex dish as offering “a gastronomic tour around Spain based on my experiences,” according to guide.michelin.com. It includes Iberian ham and lobster from the Cantabrian sea, mushrooms, and free-range egg yolk filled with sherry wine, all of which represent different parts of Spain. These are then “gingerly tucked under a silken black garlic veil and pumpkin sheets to add harmony.”
Feixa is a Catalan chef with several projects around the world, from a restaurant at Hotel Único and in the Salamanca neighborhood in Madrid to a gig providing the food on the MSC Cruise fleet.
