This event highlighted the versatility of Verdejo grapes and their ability to be paired with even very complex dishes.

A very unusual tasting was recently held in Zurich, Switzerland, pairing white wines from DO Rueda with insect-based dishes. The creative culinary creations paid homage to Asia, where they are an important part of the diet due to their high protein content.

DO Rueda, which is always looking for new ways to stand out, took advantage of this opportunity to participate in such a unique event and to show how incredibly versatile Verdejo grapes, and its wines, are. The pairing was led by Santiago Mora, the DO’s General Director, and Sebastian Bordthauser, a German expert in preparing insects.

The wines were paired with the following dishes: Asian cricket tacos, grasshoppers in tempura with sesame and mango sauce, mixed insect pie, cured cheese with worms in pesto sauce, and vegetable and flour worm stew with Hoisin sauce and rice.

Said Mora, “Innovation is part of who we are. This initiative was very popular among Swiss consumers and it allowed us to highlight the versatility of Verdejo grapes, which are capable of being paired with even the most complex dishes,” according to diariodegastronomia.com.

Switzerland is actually the first country in Europe to legalize the consumption of insects, which are subject to very strict quality control prior to reaching the market.
