Oyster with Earth Essence

Preparation

Leave the earth to infuse in the water for 24 hours. Transfer the infusion to a rotovapor (a vacuum distiller) and distill at 60ºC / 140ºF. This will give 430 g / 15 oz earth distillate. Bind with agar-agar and mix until smooth. Open the oysters, and serve topped with a spoonful of the distillate.
