Choquera Bistro is set to host an Andalusian wine and tapas evening as part of ESDS. The event will feature Cinta Ramblado, a chef who transitioned from academia to follow her passion, preparing her favorite tapas paired with wines from her native province of Huelva. "Choquera," is inspired by the term for cuttlefish (choco) and also the name given to people from Huelva. With a deep passion for discovering and showcasing Andalusia’s top producers, Ramblado has successfully hosted weekend Tapas Nights for the past few years.
Cinta Ramblado, born and educated in Huelva, Spain, has been living in Ireland for the last 30 years. An academic for 25 years, she decided two years ago to leave the University of Limerick and open her own bakery and bistro, Choquera. At Choquera, you can join Cinta on a journey through Andalusia and its most unique cuisine, all accompanied by an excellent selection of wines from Southern Spain. Cinta is proud of her Andalusian gastronomic heritage, of the recipes she grew up with and which she now shares with her customers in her intimate little bistro.
Spanish food expert, speaker, and writer Blanca Valencia will kick off the evening with an introduction to the region, sharing her insights into its gastronomy and tourism. Blanca's unique approach seamlessly weaves together pop culture, language, and art in her exploration of Spain’s regional cuisines. She is a two-time winner of the Irish Food Writing Awards and co-author of Blasta Books' "Soup." Recently, she has collaborated with the National Gallery of Ireland interlinking both Spanish and Irish art to gastronomy.
