Olive oil Workshop for trade and media

Join us for an Extra Virgin Olive Oil cooking demo and tasting hosted by Spanish food expert Blanca Valencia at the Airfield Demo Kitchen, nestled within the beautiful gardens of the estate. Blanca will guide you through a tasting journey of Spain's most important olive varietals, including Picual, Arbequina, and Hojiblanca, along with a selection of fine vinegars like PX and Sherry PDO. You'll learn the art of pairing these exceptional oils with vegetables and fruits, and its versatility in both cooking and baking. Some of the recipes will  include olive oil jellies, olive oil lemon curd, olive oil bizcocho or cake, cheese preserved in oil and fish escabeche.

All the recipes will be paired with wines from Spain’s best known D.O.s

Blanca Valencia has a Grand Diplome from Le Cordon Bleu in London and an MA in Gastronomy from TU Dublin and is an olive oil sommelier. Blanca's unique approach seamlessly weaves together pop culture, language, and art with food. She is a two-time winner of the Irish Food Writing Awards for Spicebags podcast and co-author of Blasta Books' "Soup." Recently, she has collaborated with the National Gallery of Ireland interlinking both Spanish and Irish art to gastronomy.
