Cooking Competition in Guatemala Puts Spanish Foods in the Spotlight

The two-part competition, in which culinary school students competed, aimed to promote Spanish food and drink among up-and-coming chefs

Foods & Wines from Spain and the Spanish Embassy’s Economic and Commercial Office in Guatemala City recently teamed up to organize a very special event: a cooking competition involving three local culinary schools.

The objective was to promote Spanish food and drink and boost interest in products from Spain. To that end, two competitions were held for students in their final year of school. In the first event, contestants had to prepare Valencia-style paella, and in the second event, participants were free to prepare any tapas dish they wanted using the Spanish ingredients they were provided with: canned vegetables and fish, charcuterie, ham, olive oil and spices, among other products. Prior to the competitions, a master class was held to introduce students to the ingredients.

The participating schools were: Academia Culinaria de las Américas, Academia Culinaria Guatemala (ACG), and the Instituto Técnico de Capacitación y Productividad. The importers that provided the foods were Comercio Exterior Hispano Guatemalteco, S.A.; Vinoteca; and Delicadezas Españolas.

Participants were judged by a panel of experts, which included the Spanish Ambassador to Guatemala, Alfonso Portabales; the Economic and Trade Minister with the Spanish Embassy, Juan Manuel Mora; a chef from Hotel Barceló, Nina Aldana; a chef with Angeline restaurant, Alberto Blanco; the General Manager of Nuchef, Mara Corado; a representative from Mister Menu, Pablo Bromo; and a representative from Guatedining, Ana Valdez.

The winners in the paella competition were Candy Jocol and Wendy Nájera, from the ACG, and the tapas winner was José López, who prepared patatas bravas with pimenton alioli.
